I have a really good friend, also my photographer, who taught me how to make these *kid approved* veggie popsicles. My kids, her kids, all kids that have tried them LOVE them! And you don’t have that mom guilt for letting them have a sweet!
Mom Hack: Taste test as you go! Add what you need but, get those veggies in there. Here are the ingredients.
- Popsicle molds
- 16 oz Bag of frozen strawberries
- 16 oz Bag of frozen blueberries
- Mixed baby spinach and baby kale
- 1 to 2 cups Apple Juice
Add 1-2 handfuls of baby spinach and kale to blender. Add apple juice, chop and blend. Once this is a liquid mixture, add in bag of frozen strawberries chop and blend. Then add in frozen blueberries, chop and blend. Pour mixture into popsicle molds and freeze overnight.
Note: The recipe will actually vary depending on what ingredients you have and how many popsicle molds you have. I have played around with the recipe and I know what my kids like and don’t like. See video on TikTok or Instagram.)
