Y’all know I’m southern and I love my potatoes! Rainy, cold days call for soup to warm your soul. I pulled several recipes from Pinterest and created the perfect potato soup! Let me know what you think!
This is an easy and yummy crockpot recipe for a large meal. Here is everything you will need:
- Large crockpot
- 2 lbs baking potatoes, peeled and diced
- 1 diced sweet onion
- 4 cups chicken broth
- 8 oz Cream cheese
- Salt
- Black pepper
- 1 pack real bacon bits
- 1 & 1/2 cup shredded cheddar cheese
- Extra shredded cheddar cheese for serving topping
- sour cream (optional topping)
- green onions (optional topping)
Add potatoes, onion, chicken broth, cream cheese, salt and pepper in the crockpot. Cook on high for 3 hours or low for 6 hours. Add in the bacon bits slowly and stir. Add in the shredded cheese then stir. Keep stirring until the cheese is fully melted. Mash the potatoes in the crock pot using a potato masher or handheld blender.
Add serving to bowl, top with sour cream (optional), green onions (optional), and shredded cheese. Serve and enjoy!
