Crockpot Fiesta Chicken

This recipe is so easy to make and delicious! Your family and friends are sure to love. You can either add on top of rice or make into tacos. I usually go for rice, which you can make in your rice cooker. This dish is colorful and your taste buds will dance! Here is everything you will need to make this family meal:

  • 4 boneless chicken breast
  • 1 packet Fiesta Ranch dip (by the Ranch dressing)
  • 1 can black beans (drained and rinsed)
  • 1 can Rotel
  • 1 can corn (do not drain)
  • 1 block cream cheese
  • 1 cup shredded cheese (top at the end)
  • Shredded lettuce (top at the end)
  • Cooked rice or tortillas (optional)

Grease crockpot then add chicken, black beans, Rotel, corn, Fiesta Ranch dip, and cream cheese. Cook in the crockpot on high for 4 hours or low for 6 hours. Mix and shred all together with forks. Add over rice or onto tortillas. Top with shredded cheese and lettuce (optional). Enjoy!
