Nothing like the aroma of fresh food simmering throughout your house! Ahh, the kids are home for spring break! Moms are cooking breakfast, lunch, and dinner 7 days a week. Make it easy on yourself and make crockpot meals. This recipe is fresh, easy, and delicious!
You will need the following ingredients:
- 8 boneless skinless chicken breasts
- 16 ounces baby red potatoes, cut in 1/4 pieces
- 16 ounces fresh baby carrots
- 1 can Cream of Chicken Soup
- 1/2 cup milk
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley leaves, optional
Spray a large crock pot with non-stick spray. Place cut potatoes and baby carrots in the bottom of crock pot. Lay chicken breasts over the top. Season with salt and pepper.
In a medium bowl, whisk together cream of chicken soup, salt, pepper, and milk. Pour this mixture evenly over the chicken. Cover with lid and cook on High heat 5 to 6 hours OR on Low heat 8 to 9 hours.
Top each serving with fresh chopped parsley, if desired. Serve and enjoy!
