Crockpot Breakfast Casserole

Mornings in my house are super chaotic! I usually end up making 3 different breakfast meals for 3 different kids while getting my coffee and logging in to check work emails. It’s much easier to prepare the crockpot the night before and just serve breakfast in the AM. I found this tasty recipe on Pinterest which will be perfect for Valentine’s Day! Here is what you will need:

  • Crockpot
  • 1 dozen large eggs
  • 1 cup milk
  • 1 package 32 oz. frozen hash brown potatoes
  • 1 pack real Bacon Bits
  • 2 cups cheddar cheese or colby jack – shredded
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup diced green onions – optional
  • 1 whole green pepper diced – optional

Spray your crockpot with cooking spray. Then layer the frozen potatoes, bacon bits, onions and green pepper (veggies optional). Add 1 cup shredded cheese in the crock pot in two or three layers. Sprinkle the remaining 1 cup shredded cheese over the top evenly. Beat the eggs, milk, salt, and pepper together. Pour the egg mixture over the cheese evenly in the crockpot.

Cook on low for 7 to 8 hours or until eggs are set and thoroughly cooked, start this at midnight and wake up to an amazing breakfast everyone will love. Serve and enjoy!
